You will also have the pleasure of tasting different kinds of miso, a traditional fermented seasoning that is at the heart of Japanese home cooking.
After preparing and tasting these dishes, participants partake in a serene matcha ceremony, crafting and enjoying matcha with seasonal Japanese sweets. Limited to four people, this intimate experience promises a personalized journey into Nagoya's rich culinary heritage.
A traditional Japanese meal consisting of a bowl of rice with soup and three dishes is called "Ichiju-sansai" in Japanese. Ichiju means soup and sansai consists of one main dish and two side dishes. These are dishes that have been passed down in my family. ◆Menu ・Chicken; Red miso flavored chicken ・Tofu and vegetable soup with soy sauce ・Japanese omelet ・Spinach salad with sesame sauce ・Rice balls ・Basic dashi stock Should you prefer to avoid chicken for the main dish, we would be pleased to offer grilled salmon marinated in shio-koji, salted rice malt as an alternative. Kindly inform us of your preference at the time of booking. If no preference is indicated, the main dish will be served as shown in the main photo: grilled chicken marinated in red miso. After tasting dishes, you will make your own matcha and have it with Japanese seasonal sweets. Please let us know in advance if you have any allergies or ingredients you wish to avoid.
