[About Chef Masaya Toyoshima] Born in 1984, Chef Toyoshima honed his skills at major hotel restaurants before joining Hoshino Resorts' "Yukawatan" as Sous Chef. After launching "Hoshinoya Fuji" in 2015, he became captivated by hunting and opened his own restaurant "TOYOSHIMA" in 2017. In 2024, he became the Executive Chef of Restaurant SAI. The foundation of the cuisine is wood-fired cooking, harnessing the power of various flame intensities to bring out the profound flavors of ingredients from the northern base of Mt. Fuji. These include game meats, mushrooms, mountain vegetables, highland produce, and freshwater fish. Breaking away from conventional norms, this new gastronomy is guided by the philosophy of "honoring all living things by consuming them fully."
