Nothing served comes from city supermarkets, all from local farms. Congratulations for responsible travel & supporting local family farmers around this small village (pop. 67). I’m Paul your private chef who travelled, cooked & ate my way around Spain. Typical dishes could be 25 day old baby lamb or pig, or bulls tail slowly cooked for 8 hours in wine n herbs from the land. Even River fish, or La Mancha egg plants, vegetables from my garden. I cook to Michelin star standard but I will never want a Michelin star as I refuse to work in a restaurant. I love cooking in this hidden village in small, or private groups. I cook in my private home by the 10th century castle. I’ll connect the dishes to the history of the African people who built the castle over 1000 years ago: La Mancha Spanish farm cuisine with an Air of African Arabic influence.
