That of the pork butcher is a very ancient profession, and Umbria, in particular, has managed to make it a real culinary art renowned since Roman times. Today our chef will talk about the anatomy of the pig, the different types of cuts and he will teach us all the secrets of this culinary tradition: from the basic techniques to the processing of the meat, up to the salting and maturing of the meat, and the making of sausages . At the end, we will enjoy a well-deserved lunch with the results of our work and other typical Umbrian products!
