We will visit a farm devoted to the recovery of ancient local races, from the white-mantled cows to the ancient pig breed “Nera Parmigiana”. We will observe the vegetable gardens and the vineyards and visit the magnificent cellars of an ancient fortress of the early XIV Century, where the PDO Culatello of Zibello is cured. Few people know that this is the area in the world where the greatest variety of cured meat products is obtained from pigs. After admiring the Chiaravalle della Colomba Abbey, founded in 1135 and still inhabited by monks, and its evocative cloister, we move on to Castell'Arquato, a medieval village that holds exciting discoveries and overlooks a spotless landscape, where the gaze wanders over woods, gullies, vineyards and some isolated houses. A third generation organic wine producer who has always observed the best principles of production of organic, biodynamic, natural and vegan wines, awaits us on the slopes of Val D'Arda, characterized by clear soils, rich in marine fossils, which Leonardo da Vinci also spoke of in the Codex Leicester in 1482. The visit to the vineyards and cellar is followed by a tasting of 5 wines accompanied by artisanal cured meats, cheeses, honey, homemade bread, dessert and coffee. You will appreciate the real Parmigiano cheese production in a very traditional factory. It will be possible to see the when cheese makers pull the cheese from the milk vats. You will then be taken to the seasoning/storage rooms to see the final stages of production. At the end of the tour there will be a tasting of different aged Parmigiano Reggiano Cheeses. For Parma ham Prosciutto factory visit we will proceed to the idyllic hills of Langhirano home of Prosciutto di Parma Ham. You will move into the “environmental temperature stage”, by visiting the seasoning rooms, here characterized by the typical scents of the ham. During this stage it will be explained the method of “spillatura”, the process in which only the finest ham pasts the test, those selected by the Inspector of the Consortium will then be branded with the infamous ‘Crown of Parma’.
