Begin by tasting the raw roasted cocoa bean followed by using a "Matate"; a mayan stone instrument used to naturally grind the beans into 100% Natural Chocolate. Most guest prefer to make 85% dark. All ingredients are 100% natural and no additives nor preservatives like wax is added in these products. There will be many other percentages and products to try to suite your preference.
