Your Experience
Explore Thai Akha Kitchen with hands-on Thai and Akha dishes, market-to-table ingredients, and Northern Thailand cuisine insights.
Getting started
Begin by checking in at Thai Akha Kitchen for your selected option. Your instructor explains the format of the experience and outlines whether you will join a morning cooking class with market tour, an evening cooking class, or a local fresh market tour. Once the plan is clear, you either head out to the local fresh market or move straight into the cooking area to start your session.
What to expect
Thai Akha Kitchen
This experience at Thai Akha Kitchen focuses on the food and culture of the Akha people and the flavors of Northern Thailand cuisine. Depending on the option you choose, you combine a cooking class with a local fresh market tour, take part in an evening cooking class, or join a local fresh market tour.
Features
• Insight into Akha food and culture is built into the session as you hear about the Akha people, a community that became Thai citizens in the 1900s, and how their traditions shape the Akha dishes you prepare.
• Introduction to Northern Thailand cuisine gives you context on regional ingredients and flavor profiles so you can connect what you taste in the classroom with what you encounter in Chiang Mai and the wider region.
• A morning cooking class with market tour, if selected, starts with a local fresh market tour where you visit the local market to shop ingredients; you observe daily life as you choose fresh produce, herbs, and spices to bring back to Thai Akha Kitchen.
• An evening cooking class option focuses entirely on cooking; you learn to prepare Thai and Akha dishes step by step, following a structured progression from appetizers to mains and desserts in a dedicated kitchen setting.
• A local fresh market tour option centers on the market experience itself, where you explore the local fresh market, visit the market to shop ingredients, gain insight into Akha food and culture, and learn about ingredients used in Northern Thailand cuisine.
• Appetizers, desserts, and 3 Akha dishes including Sapi Thong are on the menu as part of the cooking class: you work through dishes such as papaya salad, spring roll, mango with sticky rice, pumpkin in coconut milk, Akha salad, and Akha soup, with Sapi Thong as a tomato dipping sauce.
• Stir fry, soup, and curry, each with menu choices, form the core of your main courses, so you choose from options like sweet and sour vegetables, cashew nut with chicken, chicken with hot basil, Pad Thai, chicken in coconut milk, hot and sour prawn soup, clear soup with egg tofu, and curry made from a freshly prepared paste such as chicken green curry, chicken red curry, Panang curry, or Massaman curry.
